Sweet Potato & Fish Patties with Smashed Avocado

My Menu plan for this week:
Sunday: Roast chicken with roasted vegetables and kale salad
Monday: Left over chicken with mushrooms in rolled Danish pancake ( like a crepe)
Tuesday: Hawaiin Casserole in Slow cooker
Wednesday: Home made Pizzas
Thursday: Tuna and rice Oven bake and Salad/Veges
Friday: Pasta with bacon mushroom sauce or pesto (depending on my mood!)
Saturday: Caralee’s delicious Sweet Potato and Tuna patties with stir fried zucchini, broccoli and mushroom
Nibbles and snacks:
Fresh strawberries, raspberries and mandarins
Lemon tarts
Let us see how well I can stick to the plan.

Sweet Potato & Fish Cakes with Smashed AvocadoFor a quick easy dinner that will please everyone, try these beautiful Sweet Potato & Tuna Patties. They could also be served as a nice side if you made them a bit smaller.


2 large sweet potato’s (peeled)
1 onion
2 tablespoon olive or coconut oil
2 tablespoons of curry paste (from the Asian section of your supermarket)
1 large can tuna/salmon/smoked fish
1 egg
1/4 cup coconut flour
Salt & pepper to taste
1 avocado
1/2 lime

Roughly chop the sweet potato and place in a pot of boiling water, cook on medium heat until tender and then drain. Finely chop the onion and place in a hot pan with 1 tablespoon of olive oil. Sauté on a medium heat until the onion turns transparent. In the pan with the onions, add two tablespoons of curry paste and sauté together until the mix is fragrant. Turn the pan…
