If you could find a way to incorporate a food that provided you with magnesium and Vitamin E, could lower your blood sugar levels, reduce blood pressure and lower cholesterol you would eat it, wouldn’t you? And what if that food could also reduce hunger and assist with weight loss? It would be a miracle!
But it is not. This ‘miracle’ food is almonds and unless you are allergic to nuts, this is a great way to incorporate almonds into your diet, even if you don’t like eating whole almonds themselves.
Almond and Walnut Muffins
- 150g Anchor Lighthouse Self Raising Flour
- 50g Almond meal (ground almonds)
- 85g brown sugar
- 1 tsp Mixed Spice
- 55 g chopped nuts – I use a mix of walnuts and pecans
- 1 tablespoon butter, melted
- 2 eggs
- ½ cup (125mL) milk
- Pinch salt
- Sift all dry ingredients into a mixing bowl.
- Combine butter, eggs and milk.
- Pour into dry ingredients and mix well.
- Line muffin tray with paper muffin cases.
- Fill cases to 2/3 full
- Bake at 170ºC for 20-25 minutes or until inserted skewer comes out clean
Sprinkle with cinnamon for an additional health benefit!

Haven’t really posted about them. Mostly I do a spiced almond recipe to use for snacks. And handfuls get thrown in to a lot of other recipes.

Yeah, too many of our friends’ kids have these allergies, not to mention allergies from gluten, flour, or egg… sigh.

Allergies or food intolerance do seem to be on the rise. The gut biota is a hot topic atm. Leaky gut is associated with other problems too like depression, joint complaints, and perhaps is a indication that our diet might be too cluttered with heavily processed foods. You don’t hear too many people having allergies to the more basic fruit and veg. Intolerance- yes, but allergies not so much. Perhaps our system are overworked and develop sensitivities when our natural boody defences break down under overload? And this is passed on genetically to our children. I know there is this connection with protein intolerance of dairy products. A mother can inadvertently sensitize the baby she is carrying.

One of the biggest ailments we have in our little red dot is diabetes. It does look like diet is a critical cause. Too much processed foods and very little if any basics that you mentioned. Folks in cities like ours have hectic schedules and most do not prepare their own meals. And you are absolutely right there were studies that indicate how mothers sensitize their babies to become predisposed to this condition.

Diabetes in the red dot! Wow that is a little surprising. But then it is also a symptom of increasing obesity levels in society. And for that reason, diabetes is increasing in my big red (dot) land!

Yes we are now number 2 or 3 behind the US in the level of occurence as a % of population. Its a “pandemic”!

This is indvidual. But we think diet is the main contributing factor.

Almonds, and almond meal are staples in my pantry. When we were in England we also included almond flour, which contrary to what is commonly believed in Australia, has a much different texture to almond meal. It has a much finer, drier and lighter texture, more similar, and interchangeable with wheat flour in most recipes. I wish it was readily available here. Your recipe looks good – one to try out when I’m next in the mood for a home baked treat.

I think almond flour would be quite versatile. I wonder why we don’t have access to it? Maybe it could bee found at health food shops?
